Spray all bare metal with cooking spray , including the bottom of the lid. Canola oil or grapeseed oil is a great choice for seasoning because it holds up to higher temps.
Fill charcoal basket and leave room for ½ chimney of lit coals or add wax cubes , or tumbleweed starters.
Wait 15 – 20 minutes for charcoal to begin to start burning good, keeping intakes and exhaust fully open. When Temperature is around 200F add wood chunks.
Leaving exhaust stack fully open, close intakes to maintain desired temperature of 250F – 350F
Let UDS Smoker season for about 4 – 8 hours. DO NOT leave smoker unattended with intakes and exhaust fully open.
ROUGH TEMP SETTINGS:
¼” = Approx. 240*F
½” = Approx. 325*F
¾” = Approx. 410*F
